After the dissolutions of the monasteries the hotel passed into possession of the crown where it remained until 1599 it was then sold and passed through the hands of quite a few owner's who leased it to many families as well as the Whitbreads in 1630. Samuel Whitbread founder of the brewing business was born in the main house in 1720 and in 1779 he bought his birthplace for 720 and The Barns remained the family home until the 1890s.

Trinity College Cambridge bought it with whom it remained until 1987 when Whitbread and Company PLC bought the house and obtained permission for change of use to a hotel and restaurant. The Hotel also boasts a 13th Century Tithe Barn with timber frame red brick nogging and red tile roof. It is believed that at 1 time people lived in the roof with their animals below to keep warm; during World War two the barn was used as a storage facility for people whose houses had been bombed to store their belongings.
